Where it comes from
- Ingmákhir is a Khasi ginger landrace grown in Meghalaya
- Smaller, more fibrous and considerably more pungent than the big commercial rhizome
- Grown at altitude on hill slopes, mostly by smallholders
How it’s made
- Stone-ground at low RPM, because dried ginger is hard and hard material is where fast mills generate the most heat
What’s not in it
- No wheat or rice flour
How to use it
- Kadha — quarter teaspoon with tulsi, kali mirch and a little gud
- Masala chai — with elaichi and laung, in with the tea leaves
- Cooking — gravies where fresh ginger would go watery
- Panjiri and laddu
