What we do to it

• Machine-cleaned, hand-sorted for stone, stalk and light seed
• That’s it

What we don’t do

• No polishing. Polishing tumbles the seed, sometimes with oil or soapstone powder, to make a dull old lot look bright and new. Ours looks like seed.

How to use it

• Tadka: hot ghee, seeds in, out the moment they darken and smell — a few seconds past that and they turn bitter
• Roast whole for raita and buttermilk

Test it yourself

• Crush a few seeds between your palms and smell
• Fresh cumin is warm, sweet, immediate
• Old cumin smells of dust and not much else
